Citrus-Roasted Salmon

Ingredients

  • 1 tsp grated lemon rind
  • 2 Tbs fresh lemon juice
  • 2 Tbs honey
  • 4 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp ground coriander seeds
  • 1/4 tsp ground red pepper
  • 6 oz thawed orange juice concentrate
  • 6 oz salmon fillets, skinned (x4)
  • Cooking Spray
  • Orange Wedges (opt)
  • Flat-leaf parsley (opt)

Directions

  1. Preheat oven to 400F
  2. Combine first 9 ingredients in a bowl. Brush both sides of fillets with orange mixture. Place fills on a broiler pan coated with cooking spray. Bake at 400F for 15 minutes or until fish flakes easily when tested with a fork.
  3. Place remaining orange mixture in a small saucepan, bring to a boil, and cook until reduced to 1/2 cup (approx 2 minutes). Serve with fish and garnish with orange wedges and parsley.
  4. Yields 4 servings (1 fillet and 2T orange sauce)
