Grilled Chicken Parmesan

Ingredients

  • 1 Baguette, 10 Inches
  • 5 Tomatoes
  • 1/2 tsp Salt, divided
  • 2 Tbs Olive Oil
  • 2 garlic
  • Pinch red pepper flakes
  • 1.5 lbs chicken breast
  • 1/2 tsp oregano
  • 4 oz Mozzarella, sliced
  • 3 Tbs Parmesan, shredded
  • 1/4 cup Basil

Directions

  1. Cut 1.5 inches off baguette. Place into blender for breadcrumbs. Add tomatoes, 1/4t salt and pulse. Should be chunky.
  2. Heat 1.5 TB olive oil in med skillet over med heat. Add garlic cook about 1 minute. Add red pepper flakes and tomato mixture. Simmer 8-10 minutes.
  3. Toss chicken with 1/2 tbs olive oil and 1/4tsp salt. Split and cut baguette into 4in pieces.
  4. Grill Chicken and bread. Top w/cheese, tomato, parmesan and basil.
